Mexican Sunrise in London

For too long tequila enjoyed a poor image in the UK as a ‘good idea at the time’ slammer that was regretted the morning after by many a stag party.  That image has begun to change.  The last few years have seen a substantial increase in the number of good Mexican restaurants in London and with it has come a growing appreciation of quality Tequila.

While the United States has enjoyed tequila for decades the UK has been slower to explore the spirit.  This is probably a hangover from the days of Empire when a huge number of exotic flavours could be imported from all over the world without the need to search beyond Anglo-sphere.  Consequently, most of Latin American and Mexican spirits in particular, failed to register with the British public.  That began to change in the 1980s and now most people will have at least heard of a Tequila Sunrise, if they have yet to try one.

As the winter begins to fade and spring starts to take hold we have looked at a few of our favourite tequila based cocktails and our favourite has to be the Pink Bull.  It is an ideal drink for those transition days and well worth an exploratory sip.

The Pink Bull – Recipe by the Mozart Distillerie, Salzburg

45ml el Jimador Blanco Tequila

25ml Mozart Dry

25ml Giffard Raspberry Syrup

20ml Fresh Lemon Juice

1 Egg White

Shake all the ingredients together in cocktail shaker filled with ice. Strain into an old fashioned tumbler, filled with ice cubes.  Garnish with a few fresh raspberries.
